Is it possible to hide the Indico version, let’s say on the home page and event page?

If this is for “security” reasons then it’s pointless, because for a webapp that contains e.g. JavaScript bundles it’s trivial to compare them against releases to figure out which version it is.
But you can use a customization template override for footer.html where you override the indico_version block with an empty one. See here for details on customizations.
