Defining more than one participant category

Participant registration: is it possible to define more than one participant category f.i. - Participant, resident, nurse and apply different fee for each + set deadline for the fee, and when the deadline passes, a new fee applies?

What we do is normally use different registration forms for the deadlines and then have the categories in the form (via a choice field with items with price).
